Ingredients

  • Spaghetti or fettuccine pasta
  • Pancetta or guanciale
  • Eggs
  • Parmesan cheese
  • Black pepper
  • Salt
  • Garlic (optional)
  • Parsley (for garnish, optional)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions.
  2. In a skillet, cook the pancetta or guanciale over medium heat until crispy.
  3. In a bowl, whisk together eggs and grated Parmesan cheese.
  4. Drain the pasta, reserving some pasta water.
  5. Remove the skillet from the heat and add the hot pasta to the skillet with pancetta, mixing well.
  6. Quickly pour the egg and cheese mixture over the pasta, stirring to create a creamy sauce (add reserved pasta water if needed).
  7. Season with black pepper and salt to taste.
  8. Serve immediately, garnished with parsley if desired.

Notes

Use high-quality pancetta or guanciale for the best flavor. Don’t skip the reserved pasta water for a creamy sauce.
