  • Salt (for boiling water)
  • 1 lb large shrimp (peeled and deveined)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup dry white wine or chicken broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • ¼ cup fresh parsley (chopped)
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Optional: ½ cup breadcrumbs (for topping)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil and cook the pasta until just al dente. Drain and set aside, allowing the pasta to retain its firmness for baking.
  2. Season the Shrimp: In a mixing bowl, season the shrimp with ½ teaspoon of salt and ½ teaspoon of black pepper to enhance their natural flavors.
  3. Sauté the Shrimp: Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium-high heat. Sauté the shrimp for 1 to 2 minutes on each side until they turn pink. Remove the shrimp from the skillet and set them aside.
  4. Create the Scampi Sauce: Add the remaining butter and olive oil to the skillet. Sauté the minced garlic and optional red pepper flakes for about 30 seconds until fragrant, ensuring not to burn the garlic.
  5. Simmer with Wine: Pour in the dry white wine or chicken broth and let it simmer for 2 to 3 minutes, allowing the liquid to reduce slightly and infuse the flavors.
  6. Stir in Fresh Ingredients: Remove the skillet from heat and stir in the lemon zest, lemon juice, and chopped parsley.
  7. Preheat the Oven: Preheat your oven to 375°F (190°C) while you prepare the rest of your dish.
  8. Combine Everything: In a large bowl, combine the cooked pasta, sautéed shrimp, scampi sauce, and heavy cream. Mix everything until well incorporated.
  9. Transfer to Baking Dish: Carefully transfer the pasta mixture into a greased baking dish, ensuring an even spread for optimal baking.
  10. Add Toppings: Top your pasta bake with shredded mozzarella, grated Parmesan, and breadcrumbs if desired.
