Ingredients

Scale
  • 1 butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or rosemary (optional)

Instructions

  2. Toss the cubed butternut squash with olive oil, salt, pepper, and herbs if using until well-coated.
  3. Spread the squash on a baking sheet in a single layer, ensuring they have enough space for even roasting.
  4. Roast for about 25-30 minutes, stirring halfway through, until the squash is tender and caramelized on the edges.
  5. Add the grated Parmesan cheese to the roasted squash and allow it to melt in the oven.
  6. Melt the cheese for an additional 5 minutes or until bubbly and golden.
  7. Serve warm as a side dish, enjoying the incredible flavor combination.
