Delicious Parmesan Chicken

Crispy, golden-brown chicken topped with savory marinara sauce and gooey cheese, perfect for a cozy family dinner.

  • 4 boneless, skinless chicken breasts (about 2 pounds total)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 large eggs
  • 2 tablespoons milk
  • 2 cups panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1/2 cup vegetable oil for frying (more if needed)
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh basil leaves, torn (about 1/4 cup)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare the chicken by laying it out. If thick, butterfly it for even cooking.
  2. Set up your breading station with seasoned flour in one bowl, egg mixture in another, and panko-Parmesan mix in the third.
  3. Coat each chicken breast by dredging it in flour, dipping in egg, and coating with the panko-Parmesan mix.
  4. Fry the chicken in hot vegetable and olive oil until golden brown, about 4-5 minutes on each side.
  5. Sauté the diced onion and minced garlic in olive oil in a separate pot until fragrant and translucent.
  6. Create the marinara sauce by adding crushed tomatoes, tomato sauce, tomato paste, and herbs to the pot with sautéed onion and garlic, and simmer for about 10 minutes.
  7. Assemble the dish by layering marinara sauce in a baking dish, placing fried chicken on top, and topping with more sauce and cheese.
  8. Bake in a preheated oven at 375°F (190°C) for about 25 minutes until the cheese is melted and bubbly.
  9. Garnish with torn basil or parsley before serving.

Notes

For a complete meal, serve this chicken over pasta or alongside roasted veggies. Store leftovers in the fridge for up to 3 days, or freeze for up to 2 months.
