Ingredients

  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 aubergine (eggplant), diced
  • 200g cherry tomatoes, halved
  • 2 cloves garlic, minced
  • Olive oil
  • Salt and pepper, to taste
  • Fresh oregano or basil

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Sauté the minced garlic for about a minute until fragrant.
  3. Add the diced courgette, aubergine, and bell peppers; sauté for 5-7 minutes.
  4. Incorporate the halved cherry tomatoes, season with salt, pepper, and herbs.
  5. Cook for another 5 minutes until everything is tender.
  6. Serve warm as a main dish or side.
