  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup honey
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon grated orange zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. Whisk together the flour, baking powder, baking soda, salt, ground ginger, and ground cinnamon.
  3. Combine the honey, orange juice, vegetable oil, egg, and orange zest in another bowl, mixing well.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow the cakes to cool slightly before transferring them to a wire rack.
