One Pot Taco Pasta

A delightful fusion of tacos and pasta in a single pot, quick to make and bursting with flavor.

Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 2 cups pasta (like penne or rotini)
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Sauté the meat in a large pot over medium heat until browned. Add the onion and garlic, cooking until softened.
  2. Stir in the taco seasoning until the meat is well-coated.
  3. Add the black beans, corn, diced tomatoes, pasta, and broth. Bring the mixture to a boil.
  4. Reduce heat and simmer, covered, for about 10-12 minutes, or until the pasta is cooked to al dente.
  5. Stir in the cheddar cheese until melted.
  6. Season with salt and pepper. Garnish with cilantro if desired.

Notes

For a quicker meal, use pre-cooked rotisserie chicken. Feel free to experiment with different pasta shapes and veggies.
