A comforting One Pot Taco Pasta that combines tender rotini pasta with seasoned ground beef, black beans, and diced tomatoes, topped with melty cheese.

Ingredients

  • 8 oz rotini pasta
  • 1 lb ground beef (or turkey)
  • 1 taco seasoning packet
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup shredded cheese
  • 1 cup corn (optional)
  • Salt and pepper to taste

Instructions

  1. Brown the meat in a large pot, cooking until fully cooked and draining any excess fat.
  2. Add the taco seasoning, stirring to coat the meat.
  3. Combine the rotini pasta, black beans, diced tomatoes, chicken broth, and corn (if using). Stir to mix.
  4. Bring the mixture to a boil, then reduce the heat and simmer for 10-12 minutes, until the pasta is tender.
  5. Melt the cheese into the mixture until fully combined and serve warm with salt and pepper to taste.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
