A delightful one-pot meal that combines the flavors of tacos with orzo pasta, perfect for a comforting dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • 1 cup orzo pasta
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes with juices
  • 3 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, sliced green onions, fresh cilantro

Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat.
  2. Add the finely chopped onion and cook until softened, about 3 to 4 minutes.
  3. Stir in the minced garlic, chili powder, ground cumin, and smoked paprika (if using), and cook until fragrant.
  4. Add the orzo pasta, black beans, and diced tomatoes, stirring until well combined.
  5. Pour in the vegetable or chicken broth and bring everything to a boil.
  6. Reduce the heat to low, cover, and simmer for 10 to 12 minutes.
  7. Once done, season with salt and freshly ground black pepper to taste.
  8. Serve warm, topped with optional garnishes.
