A comforting and hearty dish that combines traditional lasagna flavors in a simple one-pot soup.

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 1 can (15 ounces) crushed tomatoes
  • 2 teaspoons dried Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups spinach or kale
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef or sausage over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Pour in the broth and crushed tomatoes. Stir in the Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then add the broken lasagna noodles.
  5. Reduce heat and simmer for about 10-12 minutes, or until the noodles are tender.
  6. Stir in the spinach or kale and let it wilt.
  7. Serve with a dollop of ricotta cheese and sprinkle with mozzarella and fresh basil, if desired.

Notes

This soup can be customized with various veggies and proteins. Store leftovers in an airtight container in the fridge for up to 3 days.
