A hearty and flavorful one-pot meal that is perfect for feeding a crowd or enjoying as leftovers.

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (28 oz) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup chicken or beef broth
  • Optional toppings: sour cream, shredded cheese, green onions

Instructions

  1. In a large pot over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.
  2. Add diced onion and minced garlic to the pot, sautéing until the onion is translucent.
  3. Stir in the chili powder, cumin, salt, and pepper.
  4. Add the kidney beans, black beans, diced tomatoes, and broth to the pot.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning if needed.
  7. Serve hot with optional toppings.

Notes

For extra flavor, add a splash of Worcestershire sauce or hot sauce while cooking. Feel free to use different types of beans for variety.
