A quick and easy meal combining tender chicken, savory rice, and mixed vegetables, all cooked in one pot for comfort and flavor.

Ingredients

  • 1 lb chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until fragrant.
  2. Add the chicken pieces and brown on all sides.
  3. Stir in the rice and cook for an additional minute.
  4. Pour in the chicken broth and add mixed vegetables, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 20-25 minutes, until the rice is tender and chicken is cooked through.
  6. Fluff the rice with a fork, garnish with fresh parsley, and serve.

Notes

For added flavor, marinate the chicken beforehand. This dish can be stored in an airtight container for up to 3 days in the fridge or frozen for 2 months.
