  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 8 ounces egg noodles
  • ½ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper to taste.
  2. Heat olive oil in a large skillet over medium-high heat then add the chicken in a single layer and sear for 5-7 minutes until golden brown.
  3. Flip the chicken pieces and cook for another 2-3 minutes until they are fully cooked and golden on all sides.
  4. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth and bring it to a gentle simmer.
  6. Add the egg noodles, gently stirring to combine with the broth, and let everything simmer for 7-10 minutes until the noodles are al dente.
  7. Reduce the heat to low, and stir in the heavy cream and grated Parmesan cheese until melted and creamy.
  8. Garnish with chopped fresh parsley and serve immediately.

Notes

For a lighter option, consider substituting heavy cream with half-and-half or almond milk. Use rotisserie chicken for quicker preparation.
