Easy and delicious no-bake cookies made with chocolate and oats, perfect for a quick treat.

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (or a butter substitute)
  • 1/2 cup milk
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Melt the ingredients: In a medium saucepan over medium heat, combine the granulated sugar, cocoa powder, unsalted butter, and milk. Stir constantly until the mixture melts and begins to boil. Allow it to boil for 1 minute.
  2. Mix the oats: Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt. Add in the quick-cooking oats, and mix until they are well-coated with the chocolate mixture.
  3. Scoop and chill: Using a cookie scoop or two spoons, drop spoonfuls of the mixture onto a sheet of parchment paper. Once you’ve created all your cookies, transfer them to the refrigerator to chill for at least 30 minutes, or until they firm up.

Notes

For best results, use quick-cooking oats and allow cookies to cool in the fridge. Experiment with mix-ins like nuts or chocolate chips.
