Delicious no-bake truffles made with Biscoff cookies and cream cheese, covered in chocolate for a sweet treat that’s easy to make.

Ingredients

  • 2 cups Biscoff cookies (finely crushed)
  • 1/2 cup cream cheese (softened)
  • 1 to 2 tbsp Biscoff spread
  • 1 1/2 to 2 cups chocolate chips (milk, dark, or white)
  • Optional: crushed cookies, drizzle of Biscoff spread, sea salt for topping

Instructions

  1. Combine crushed Biscoff cookies, softened cream cheese, and Biscoff spread in a bowl until a sticky, dough-like consistency forms.
  2. Roll tablespoon-sized portions into small balls and place them on a parchment-lined tray.
  3. Chill in the refrigerator for 15 to 20 minutes until firm.
  4. Melt the chocolate chips in a microwave-safe bowl or double boiler until smooth.
  5. Dip each chilled cookie ball into the melted chocolate, ensuring they are fully coated.
  6. Garnish with crushed cookies, Biscoff spread, or sea salt as desired before the chocolate sets.
  7. Refrigerate the dipped truffles until chocolate is fully set, about 20 to 30 minutes.
  8. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for about a month.
