A deliciously spiced Nigerian chicken stew, simmered with care and a blend of bold flavors, perfect for cozy gatherings.

Ingredients

  • 2 pounds fresh bone-in chicken cuts
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked pepper
  • 1 teaspoon paprika
  • 1 tablespoon curry powder
  • 1 teaspoon thyme
  • 1 medium onion, sautéed until sweet
  • 1/4 cup vegetable oil or olive oil
  • 4 medium Roma tomatoes, fresh
  • 1 medium red bell pepper
  • 1 medium scotch bonnet pepper (adjust to spice preference)
  • 2 tablespoons tomato paste
  • 1 cube bouillon
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 medium lime (optional)

Instructions

  1. Combine the chicken pieces with salt, cracked pepper, paprika, curry powder, thyme, and sautéed onion in a large bowl. Allow to marinate for at least 30 minutes.
  2. Heat the oil in a skillet over medium-high heat. Once hot, add the marinated chicken pieces and sear for about 5–7 minutes on each side.
  3. Blend the fresh tomatoes, red bell pepper, and scotch bonnet pepper until smooth to create the stew base.
  4. Add the tomato paste to the skillet and fry over medium heat for about 2 minutes to deepen the flavor.
  5. Pour the blended mixture into the skillet and let it simmer for about 10 minutes.
  6. Stir in the garlic powder, ginger powder, and crumble the bouillon cube into the sauce. Return the browned chicken to the skillet.
  7. Cover the skillet and let it simmer on low heat for 25 to 30 minutes.
  8. Sprinkle with chopped parsley or cilantro and optional lime juice before serving with your preferred sides.

Notes

Marinate chicken overnight for more flavor. Adjust spice level by modifying the amount of scotch bonnet pepper.
