A comforting dish of long-grain rice infused with earthy flavors of mushrooms and herbs, perfect for any meal.

Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat until shimmering.
  2. Add chopped onion and cook until soft, about 3-4 minutes.
  3. Add minced garlic and sliced mushrooms; sauté until mushrooms are tender, around 5-7 minutes.
  4. Stir in rice, thyme, salt, and pepper; cook for 2 minutes.
  5. Add vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked through.
  7. Fluff rice with a fork and serve warm.
