  • 8 oz noodles (e.g., egg noodles or rice noodles)
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. Heat sesame oil over medium-high heat in a large skillet or wok.
  3. Brown the ground beef, breaking it apart while cooking until browned.
  4. Sauté the garlic and ginger for an additional minute until fragrant.
  5. Add the bell peppers, carrots, and snap peas, stir-frying until tender-crisp.
  6. Pour in the soy sauce and hoisin sauce, stirring to coat the beef and vegetables.
  7. Combine everything by adding the cooked noodles to the skillet and tossing until well combined.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with chopped green onions.

Notes

Use lean ground beef for lower fat content. Substitute ground beef with tofu for a vegetarian option.
