These muffins are soft and cozy, combining applesauce and oats for a delightful treat perfect for breakfast or snacking.

  • 1 cup rolled oats
  • 1 cup applesauce
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the rolled oats and applesauce.
  3. Add the brown sugar, vegetable oil, eggs, and vanilla extract to the bowl and stir until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fill the muffin cups about 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick poked into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

Store leftovers in an airtight container for 2-3 days or freeze for 2-3 months. Toasted oats can enhance flavor.
