  • 4 medium sweet potatoes, peeled and cut into bite-sized cubes
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons white miso paste
  • 2 tablespoons maple syrup (optional for extra sweetness)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions or sesame seeds for garnish (optional)

Instructions

  1. Prepare the sweet potatoes by peeling them and slicing into even bite-sized cubes.
  2. Create the miso butter mixture by combining melted butter, white miso paste, and maple syrup in a bowl.
  3. Combine ingredients by adding sweet potato cubes to the miso butter mixture and tossing until coated.
  4. Arrange the coated sweet potatoes on a baking sheet lined with parchment paper.
  5. Roast in a preheated oven at 400°F (200°C) for about 25 to 30 minutes, flipping halfway through.
  6. Garnish with chopped green onions or sesame seeds and serve warm.

Notes

For additional flavor, spices like cumin or smoked paprika can be added. Leftovers can be stored in an airtight container for up to 3 days.
