A delightful breakfast twist with mini muffins that are crispy on the outside and juicy on the inside.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cooked and crumbled sausage
  • 1/2 cup shredded cheddar cheese
  • 2 large eggs, beaten
  • 1/4 cup milk
  • 1 tablespoon chopped fresh chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the flour, baking powder, and salt in a mixing bowl.
  3. Whisk together the eggs and milk in another bowl.
  4. Mix the egg mixture with the dry ingredients until just combined.
  5. Fold in the sausage, cheddar cheese, and chives.
  6. Grease a mini muffin tin well.
  7. Spoon the batter into each cup, filling them about 3/4 full.
  8. Bake for 15-18 minutes until golden brown.
  9. Cool for a few minutes before removing from the tin.

Notes

Don’t overmix the batter; add diced bell peppers or onions for extra flavor.
