A layered delight featuring a crumbly biscuit base, luscious caramel, and a decadent chocolate topping.

Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 400g sweetened condensed milk
  • 150g dark chocolate, chopped
  • 50g unsalted butter

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the digestive biscuits into fine crumbs and mix with the melted butter. Press the mixture into a lined baking tin.
  3. Bake your biscuit base for about 10 minutes, then allow to cool.
  4. Combine the sweetened condensed milk and 100g of butter in a saucepan. Heat gently, stirring until thickened into caramel.
  5. Pour the caramel over the cooled biscuit base and let set in the fridge for about 2 hours.
  6. Melt the dark chocolate with the remaining butter in a heatproof bowl over simmering water or in the microwave.
  7. Spread the melted chocolate over the caramel layer and optionally sprinkle sea salt on top.
  8. Chill until fully set, about 1 hour, then cut into squares and serve.

Notes

Serve with fresh fruit, whipped cream, or vanilla ice cream. Cannot be rushed during chilling to achieve clean cuts.
