Ingredients

Scale
  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the Grill: Preheat a grill to medium-high heat.
  2. Grill the Corn: Grill the corn on the cob until charred and cooked through, about 10 minutes, turning occasionally.
  3. Prepare the Creamy Sauce: In a bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, and salt.
  4. Spread the Sauce: Once the corn is cooked, spread the mayonnaise mixture over each ear of corn.
  5. Sprinkle with Cotija Cheese: Sprinkle with crumbled cotija cheese and additional chili powder, if desired.
  6. Garnish and Serve: Garnish with fresh cilantro before serving.

Notes

For extra smokiness, add wood chips to the grill while cooking. Feta cheese can substitute cotija cheese if needed.
