Delightful and nutritious Mediterranean stuffed sweet potatoes filled with chickpeas, feta, and fresh vegetables.

Ingredients

  • 4 sweet potatoes
  • 1 can chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 1 cup mixed vegetables (such as bell peppers, spinach, and cucumbers), chopped
  • 1/4 cup fresh herbs (such as parsley or cilantro), chopped
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake for 45-50 minutes, or until they’re tender.
  4. Combine chickpeas, feta cheese, mixed vegetables, herbs, lemon juice, olive oil, salt, and pepper in a bowl.
  5. Fluff the insides of the sweet potatoes with a fork.
  6. Stuff each sweet potato with the chickpea mixture.
  7. Serve warm and enjoy!

Notes

For a vegan version, swap the feta with a plant-based cheese alternative.
