A quick, flavor-packed bowl celebrating the robust flavors of grilled sirloin steak, fresh veggies, and a delightful tzatziki sauce.

  • 1.5 pounds Sirloin Steak
  • 1/4 cup Olive Oil
  • 4 cloves Garlic (minced)
  • 1 whole Lemon (juiced)
  • 1 tablespoon Dried Oregano
  • 1 tablespoon Dried Thyme

  • 2 cups Cooked Grains (brown rice, quinoa, or cauliflower rice)
  • 1 can Roasted Chickpeas (optional)
  • 1 cup Cherry Tomatoes (diced)
  • 1 cup Cucumber (diced)
  • 1 small Red Onion (sliced)
  • 1/2 cup Kalamata Olives
  • 1/2 cup Feta Cheese (optional)
  • 1/4 cup Fresh Herbs (like parsley or dill)
  • 1 cup Greek Yogurt
  • 1 tablespoon Honey (optional)
  • 1 whole Cucumber (grated and squeezed)
  • 1 clove Garlic (minced)
  • 1/2 whole Lemon (juiced)
  • 1 tablespoon Fresh Dill (chopped)

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the olive oil, minced garlic, fresh lemon juice, dried oregano, dried thyme, salt, and black pepper.
  2. Marinate the Steak: Place the sirloin steak in a baking dish and pour the marinade over it, coating every inch.
  3. Make the Tzatziki Sauce: Mix grated cucumber with a pinch of salt, and in another bowl, combine Greek yogurt, minced garlic, lemon juice, fresh dill, and honey. Squeeze the cucumber to remove excess liquid and fold it into the yogurt mixture.
  4. Whisk the Vinaigrette: Combine extra olive oil with lemon juice and seasoning.
  5. Cook the Steak: Heat a grill or cast-iron pan over medium-high heat and cook the marinated steak for 4-5 minutes per side for medium-rare. Let it rest.
  6. Assemble the Mediterranean Steak Bowl: Layer cooked grains with diced cherry tomatoes, cucumber, red onion, roasted chickpeas, olives, and fresh herbs.
  7. Finish with Sauces: Slice the rested steak and place it atop the bowl with tzatziki sauce and vinaigrette.

Notes

Store leftovers in airtight containers for up to 3 days. Reheat on low heat and serve with fresh toppings.
