  • 1 pound shrimp, peeled and deveined
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Boil the shrimp: In a large pot, bring water to a boil. Add the shrimp and cook until they are pink, which should take about 2-3 minutes. Once they’re perfectly cooked, drain and set aside.
  2. Prepare the salad base: In a large bowl, combine the mixed greens, cherry tomatoes, diced cucumber, thinly sliced red onion, pitted olives, and crumbled feta cheese.
  3. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and dried oregano.
  4. Assemble the salad: Add the cooked shrimp to the salad bowl. Drizzle the dressing generously on top, then toss everything to combine well. Serve immediately for the best flavor!
