A vibrant blend of quinoa, fresh vegetables, and tangy feta cheese, perfect for a light meal or a side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse and cook the quinoa by bringing 2 cups of water to a boil, add rinsed quinoa, reduce to simmer, cover, and cook for 15 minutes.
  2. Mix the fluffy quinoa with cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese in a large bowl.
  3. Whisk together olive oil, red wine vinegar, oregano, and a pinch of salt and pepper in a smaller bowl.
  4. Pour the dressing over the salad and toss gently until well-coated.
  5. Serve chilled or at room temperature for best flavor.

Notes

This salad can be stored in an airtight container in the refrigerator for up to 3 days. It tastes even better the next day.
