A vibrant and refreshing Mediterranean Quinoa Salad that combines colorful fresh ingredients for a perfect meal prep or side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water until the water runs clear. In a pot, combine quinoa and your choice of water or vegetable broth.
  2. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for about 15 minutes, or until the liquid is absorbed. Once the quinoa is cooked, let it cool completely.
  3. In a large bowl, combine the cooled quinoa with cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper until smooth.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve the salad chilled or at room temperature.

Notes

Store leftover quinoa salad in an airtight container in the refrigerator for up to 3 days. For freshness, enjoy within 1-2 days.
