A vibrant, hearty, and refreshing Mediterranean quinoa salad, perfect for any gathering or standalone meal.

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness. In a pot, combine the rinsed quinoa and water or broth. Bring to a boil.
  2. Reduce the heat to a simmer, cover, and let it cook for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  3. Fluff the quinoa with a fork and let it cool to room temperature.
  4. Combine the cooled quinoa with halved cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese in a large bowl.
  5. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl to create a bright dressing.
  6. Pour the dressing over the salad and toss gently to ensure everything is evenly coated.
  7. Garnish with fresh parsley before serving for an extra pop of color and flavor.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For added flavor, consider using vegetable broth instead of water.
