A vibrant and healthy Mediterranean dish featuring tender chicken breasts layered with zucchini, bell peppers, and feta cheese, perfect for a satisfying dinner.

  • 4 pieces Chicken Breasts
  • 2 medium Zucchini
  • 1 each Red Bell Pepper
  • 1 each Yellow Bell Pepper
  • 1 medium Red Onion
  • 1 cup Cherry Tomatoes
  • 3 cloves Garlic
  • 1 cup Kalamata Olives
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Feta Cheese
  • 1 handful Fresh Parsley
  • 1 each Lemon Wedge

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, paprika, dried oregano, and dried basil.
  3. Slice the zucchini into even rounds, dice the bell peppers and onion, and halve the cherry tomatoes.
  4. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, then add the chopped red onion.
  5. Add the sliced zucchini, bell peppers, and halved cherry tomatoes to the skillet. Sauté until they’re tender.
  6. Stir in the Kalamata olives, allowing them to warm through.
  7. Spread the sautéed mixture evenly across the bottom of a baking dish and nestle the seasoned chicken pieces on top.
  8. Crumble the feta cheese over the chicken and vegetables.
  9. Bake for about 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  10. Garnish with fresh parsley and serve with lemon wedges.

Notes

For extra tenderness, marinate the chicken in olive oil, lemon juice, and garlic before seasoning.
