A warm and comforting Mediterranean Chicken Rice Casserole filled with vibrant flavors, perfect for family dinners and gatherings.

  • 3 tablespoons olive oil
  • 3 minced garlic cloves
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • ½ teaspoon thyme
  • Salt and pepper to taste
  • 1½ lb boneless skinless chicken breasts or thighs
  • 1 cup uncooked long-grain rice
  • ½ small diced onion
  • 1 cup halved cherry tomatoes
  • ¼ cup chopped sun-dried tomatoes
  • ½ cup sliced Kalamata olives
  • Juice of ½ lemon
  • 2½ cups chicken broth
  • ½ cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grab your favorite baking dish.
  2. Whisk together olive oil, garlic, paprika, oregano, thyme, salt, and pepper in a bowl.
  3. Coat the chicken thoroughly with the seasoning mixture.
  4. Spread the uncooked rice evenly in the greased baking dish.
  5. Add diced onion, cherry tomatoes, sun-dried tomatoes, Kalamata olives, lemon juice, and chicken broth to the rice; stir gently.
  6. Place the seasoned chicken evenly on top of the rice mixture.
  7. Cover the baking dish tightly with foil and bake for 35 minutes.
  8. Remove the foil and sprinkle feta cheese over the chicken; bake uncovered for 10-15 minutes.
  9. Let the casserole rest for 5 minutes before garnish with parsley.
  10. Serve warm with a side of crusty bread or salad.

Notes

Feel free to swap chicken for chickpeas for a vegetarian version or experiment with different vegetables.
