A vibrant salad brimming with crisp vegetables, briny olives, and creamy feta, perfect for summer picnics or as a side to grilled meats.

Ingredients

  • 4 stalks Fresh Celery, chopped
  • 3 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice, freshly squeezed
  • ¼ cup Fresh Herbs (parsley, dill, or mint), chopped
  • ½ cup Feta Cheese, crumbled
  • ½ cup Pitted Olives, sliced
  • 1 cup Heirloom Tomatoes, chopped (optional)

Instructions

  1. Prepare the Celery: Wash and slice the celery into bite-sized pieces and place them in a large mixing bowl.
  2. Make the Dressing: In a small bowl, whisk together olive oil and lemon juice until combined.
  3. Toss in the Goodies: Toss the chopped herbs, olives, and feta into the bowl with the celery.
  4. Combine the Salad: Pour the dressing over the salad and gently toss to combine.
  5. Rest & Serve: Let the salad rest for a few minutes or refrigerate for up to an hour before serving.

Notes

This salad is best enjoyed fresh, but can be stored in an airtight container in the fridge for up to two days. Customize with bell peppers or sun-dried tomatoes for added flavor.
