A vibrant Mediterranean Bowl featuring juicy turkey meatballs paired with fresh cucumbers, Kalamata olives, and tangy tzatziki.

  • 1 pound ground turkey
  • ½ cup Italian breadcrumbs or blanched almond flour
  • ¾ cup yellow onion (chopped)
  • 1 large egg
  • 2 teaspoons garlic (minced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Chopped cucumbers
  • Kalamata olives
  • Tzatziki sauce
  • Fresh dill
  • Lemon wedges or slices
  • Cooked rice or pearl couscous

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the ground turkey, breadcrumbs (or almond flour), chopped onion, minced garlic, egg, kosher salt, and black pepper, mixing until well combined.
  3. Shape the mixture into meatballs about the size of golf balls.
  4. Place the meatballs on a lined baking sheet and bake for about 15 minutes. Broil for an additional 2-3 minutes for extra crispness.
  5. While the meatballs bake, prepare your rice or couscous according to the package instructions and chop your cucumbers.
  6. Assemble your bowl with a base of rice or couscous, topped with turkey meatballs, chopped cucumbers, and olives. Drizzle with tzatziki sauce and finish with fresh dill and a wedge of lemon.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze meatballs for up to 2 months.
