  • 1 whole Fresh Lemon (juice for brightness and acidity)
  • 1/2 cup Kalamata Olives (can substitute with green olives)
  • 1 cup Cherry Tomatoes (substitute with diced regular tomatoes if unavailable)
  • 1 medium Red Onion (can use yellow or sweet onion)
  • 3 cloves Garlic (fresh garlic is best; use garlic powder as a backup)
  • 2 tablespoons Capers (can substitute with additional olives)
  • 1 teaspoon Dried Oregano (or use fresh oregano/Italian seasoning)
  • 2 tablespoons Olive Oil (can substitute with avocado oil)
  • to taste Salt (essential seasoning)
  • to taste Black Pepper (essential seasoning)
  • 1/4 cup Fresh Parsley (optional but recommended for presentation)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the ingredients: chop the red onion, halve the cherry tomatoes, mince the garlic, and slice the Kalamata olives.
  3. Marinate the cod by squeezing the lemon juice over the fillets and seasoning with salt, pepper, and oregano.
  4. Sauté the onion and garlic in olive oil over medium heat until translucent.
  5. Combine the sautéed mixture with cherry tomatoes, olives, and capers in a bowl.
  6. Assemble the dish by spreading the vegetable mixture over the cod fillets.
  7. Bake in the preheated oven for 20-25 minutes until cooked through.
  8. Garnish with freshly chopped parsley before serving.
