Juicy chicken breasts in a creamy sauce with sun-dried tomatoes and spinach, creating a romantic and irresistible meal.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • Olive oil for cooking

Instructions

  1. Heat the skillet: In a large skillet, heat olive oil over medium heat until shimmering and ready for action.
  2. Season the chicken: Season the chicken breasts generously with salt and pepper, then place them in the skillet. Cook until golden brown on both sides and cooked through, approximately 6-7 minutes per side. Once done, remove from the skillet and set aside.
  3. Sauté the sun-dried tomatoes: In the same skillet, add your chopped sun-dried tomatoes. Sauté for 1-2 minutes until they’re fragrant and slightly softened.
  4. Simmer with chicken broth: Pour in the chicken broth and bring to a simmer, allowing those delicious flavors to meld together for a few minutes.
  5. Add cream and cheese: Pour in the heavy cream and sprinkle the Italian seasoning and grated Parmesan cheese. Stir everything together until the sauce is combined and begins to thicken slightly.
  6. Incorporate the spinach: Add the fresh spinach to the skillet, stirring it in until it wilts down, adding that pop of color and nutritional boost.
  7. Return the chicken: Nestle the chicken back into the skillet, allowing it to soak up the creamy sauce for a couple of minutes.
  8. Serve: Serve your Marry Me Chicken hot, drizzled with the luscious sauce. Enjoy every bite!

Notes

Perfectly cooked chicken can be checked with a meat thermometer (165°F internal temperature). For a lighter version, substitute half-and-half for heavy cream and use low-fat cheese.
