  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 8 ounces pasta (fettuccine or penne)
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken breasts with garlic powder, salt, and pepper. Cook until golden and fully cooked, about 6-7 minutes per side. Remove and let rest.
  3. In the same skillet, add heavy cream, chicken broth, sun-dried tomatoes, and Italian seasoning. Simmer until slightly thickened, about 5 minutes.
  4. Slice the chicken and return it to the skillet. Add the cooked pasta, tossing to combine.
  5. Serve hot, garnished with fresh basil and grated Parmesan cheese.

Notes

For added flavor, marinate the chicken breasts in garlic and Italian seasoning before cooking. Fresh pasta cooks faster than dried, so adjust cooking times accordingly.
