Sweet and tangy roasted carrots glazed with maple syrup and Dijon mustard, perfect for any meal.

  • 1 lb carrots, peeled and cut into sticks
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the maple syrup, Dijon mustard, and olive oil in a mixing bowl.
  3. Add the carrot sticks to the bowl and toss to coat evenly.
  4. Spread the coated carrots out on a baking sheet in a single layer.
  5. Season with salt and pepper to taste.
  6. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  7. Remove from the oven and garnish with fresh thyme if desired.
