A delightful side dish featuring tender baby carrots glazed with maple syrup and crispy bacon, perfect for any meal.

  • 1 pound baby carrots, peeled and trimmed
  • 4 slices bacon, diced
  • 1/4 cup pure maple syrup
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the diced bacon until crispy, about 5-7 minutes, then drain on paper towels.
  3. Sauté the carrots in the remaining bacon drippings with butter and olive oil for about 5 minutes.
  4. Add maple syrup, salt, black pepper, and garlic powder to the carrots and stir to combine.
  5. Transfer the carrots and sauce to a baking dish and sprinkle crispy bacon on top.
  6. Roast for 20-25 minutes or until tender and caramelized, stirring halfway through.
  7. Garnish with parsley before serving, if desired.
