A delightful dessert combining creamy coconut, glutinous rice, and fresh mango, perfect for warm weather.

Ingredients

  • 1 cup glutinous rice
  • 2 cups coconut milk
  • 1 1/4 cups sugar
  • 1/2 teaspoon salt
  • 2 ripe mangoes
  • Sesame seeds or mung beans for topping (optional)

Instructions

  1. Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in water for at least 3 hours or overnight.
  2. Drain the rice and steam it for about 20-25 minutes until cooked through.
  3. Combine coconut milk, sugar, and salt in a saucepan. Heat gently until the sugar is dissolved.
  4. Pour the sweetened coconut milk over the steamed rice and let it sit for about 30 minutes.
  5. Peel and slice the mangoes, arranging them for presentation.
  6. Serve the sticky rice with mango slices, drizzled with reserved coconut milk and topped with sesame seeds or mung beans if desired.

Notes

Store leftovers separately; sticky rice lasts up to 2 days in the refrigerator, while mango should be consumed within 1 day.
