Mango Sticky Rice

A delightful Thai dessert that combines glutinous rice with sweet mango and creamy coconut milk.

Ingredients

  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes
  • Sesame seeds or mung beans for garnish

Instructions

  1. Rinse the glutinous rice until the water flows clear. Soak the rice in water for at least 4 hours, preferably overnight.
  2. Steam the rice in a bamboo or metal steamer for about 25-30 minutes until tender.
  3. Combine 1 1/4 cups of the coconut milk, sugar, and salt in a saucepan over low heat. Stir until the sugar dissolves.
  4. Reserve 1/4 cup of the coconut mixture to drizzle over the finished dish.
  5. Mix the cooked rice with the remaining coconut milk mixture and let it sit for 30 minutes.
  6. Slice the mangoes into thin wedges while the rice is resting.
  7. Serve the sticky rice alongside the mango and drizzle with the reserved coconut milk. Garnish with sesame seeds or mung beans.

Notes

Ensure the rice is well-soaked to avoid crunchy spots. Store leftovers in an airtight container in the fridge for up to 2 days.
