A refreshing and colorful salad featuring mango, cucumber, blueberries, and avocado, dressed with zesty lime juice.

Ingredients

  • 1 large ripe mango, peeled, pitted, and diced
  • 1 medium cucumber, peeled and diced
  • 1 cup fresh blueberries, rinsed and drained
  • 1 ripe avocado, pitted, peeled, and diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey (optional for sweetness)
  • Salt and pepper to taste

Instructions

  1. Prepare the Mango: Peel and dice the mango into bite-sized pieces.
  2. Dice the Cucumber: Peel, cut in half lengthwise, and slice into half-moons.
  3. Rinse the Blueberries: Rinse under cool water and drain well.
  4. Cube the Avocado: Cut in half, remove pit, and scoop out flesh into cubes.
  5. Chop the Red Onion: Finely chop and set aside.
  6. Combine the Ingredients: In a large bowl, mix the mango, cucumber, blueberries, avocado, red onion, and cilantro.
  7. Whisk the Dressing: In a small bowl, whisk together lime juice and honey.
  8. Dress the Salad: Drizzle the dressing over the salad and toss gently.
  9. Season to Taste: Add salt and pepper as desired.
  10. Let it Sit: Allow salad to rest for about 10 minutes before serving.
