Golden, crispy potato skins filled with melted cheddar cheese and crumbled bacon, topped with sour cream and green onions for a comforting and indulgent dish.

Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the russet potatoes under running water, then prick each potato several times with a fork and rub with olive oil, salt, and pepper.
  3. Bake the potatoes directly on the oven rack for about 45 minutes.
  4. Cool the potatoes for a few minutes, then cut in half lengthwise and scoop out a portion of the flesh.
  5. Brush the insides of each potato skin with olive oil and sprinkle with salt and pepper.
  6. Return the potato skins to the oven and bake for an additional 10 minutes.
  7. Fill each potato skin with shredded cheddar cheese and crumbled bacon.
  8. Melt the cheese by returning the filled potato skins to the oven for about 5 minutes.
  9. Garnish with sour cream and chopped green onions before serving.

Notes

Customize with toppings like guacamole or different cheeses for variety.
