A hearty meal with tender chicken breasts, golden-brown potatoes, gooey cheese, and crispy bacon that brings warmth and comfort.

  • 2 chicken breasts
  • 4 large potatoes, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked bacon, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) to get it nice and hot for our delicious feast.
  2. Toss the diced potatoes with olive oil, salt, and pepper until well coated.
  3. Spread the potatoes evenly on a baking sheet and bake for 20 minutes until golden and crisp.
  4. Season the chicken breasts with salt and pepper.
  5. Cook the chicken in a skillet over medium heat until golden brown and fully cooked, about 6-7 minutes per side.
  6. Remove the chicken from the heat and slice it into bite-sized pieces.
  7. Combine the baked potatoes, sliced chicken, crumbled bacon, and shredded cheese in a large baking dish.
  8. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Garnish with green onions if desired and serve hot.

Notes

For extra flavor, consider adding more cheese before the final bake. Store leftovers in an airtight container in the fridge for up to 3 days.
