A hearty breakfast skillet filled with crispy potatoes, savory sausage, vibrant bell peppers, and perfectly cooked eggs, topped with melted cheese.

Ingredients

  • 2 cups diced potatoes
  • 4 large eggs
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked sausage or bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil or butter for cooking
  • Chopped green onions or parsley for garnish

Instructions

  1. Heat the Pan: In a large skillet, heat olive oil or butter over medium heat.
  2. Cook the Potatoes: Add the diced potatoes and cook until they are golden and tender, about 10-12 minutes. Stir occasionally.
  3. Sauté the Veggies: Add the diced bell peppers and onions to the skillet, cooking until softened, about 5 minutes.
  4. Combine with Sausage: Stir in the cooked sausage or bacon and season with salt and pepper.
  5. Create Wells for Eggs: Make four small wells in the mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
  6. Melt the Cheese: Sprinkle the skillet with shredded cheese, cover again, and allow the cheese to melt.
  7. Garnish and Serve: Garnish with chopped green onions or parsley before serving.

Notes

Use a nonstick skillet to prevent sticking, and feel free to swap in your favorite vegetables.
