A warm and nourishing lentil soup, perfect for chilly days, packed with earthy lentils and fresh vegetables.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic, and sauté until softened.
  2. Combine the ingredients: Stir in the lentils, vegetable broth, diced tomatoes, cumin, thyme, salt, and pepper.
  3. Bring to a boil: Bring the mixture to a boil.
  4. Simmer to perfection: Reduce the heat to a simmer. Cover and cook for 30-40 minutes, or until the lentils are tender.
  5. Adjust and serve hot: Once the lentils are tender, adjust the seasoning as necessary. Serve hot.

Serve with crusty bread, yogurt, or fresh herbs. Leftovers can be stored in the fridge for up to 5 days or frozen for up to 3 months.
