A refreshing twist on the classic Italian dessert, infused with bright lemon flavors and creamy mascarpone.

Ingredients

  • 3 large eggs
  • ½ cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • ½ cup brewed lemon-infused tea or lemonade (for dipping)
  • Optional: Fresh berries for garnish
  • Optional: Mint leaves for garnish

Instructions

  1. Separate the egg whites and yolks into two separate bowls.
  2. Whisk the egg yolks with the granulated sugar until a pale and creamy mixture forms.
  3. Fold in the mascarpone cheese, fresh lemon juice, lemon zest, and vanilla extract until smooth.
  4. Whip the heavy cream in a separate bowl until stiff peaks form.
  5. Combine the whipped cream into the mascarpone mixture gently to retain the airy texture.
  6. Dip each ladyfinger quickly into the lemon-infused tea or lemonade.
  7. Layer the dipped ladyfingers in a dish and add a layer of lemon-mascarpone mixture on top.
  8. Repeat alternating layers until finished with the creamy mixture on top.
  9. Chill in the refrigerator for at least 4 hours or overnight.

Notes

Serve with fresh berries and mint leaves for a bright touch. For storage, keep covered in the refrigerator for up to 3 days.
