Deliciously zesty Lemon Poppy Seed Muffins that brighten up any day with their tender crumb and refreshing lemon flavor.

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. Whisk together flour, sugar, baking powder, salt, and poppy seeds.
  4. Combine buttermilk, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice in another bowl.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

For a buttermilk substitute, mix 1/2 cup of milk with 1/2 tablespoon of lemon juice or vinegar and let it sit for 5-10 minutes.
