  • 1 pound Boneless Skinless Chicken Breasts (Cut into 1 ½ inch pieces)
  • 2 tablespoons Dried Parsley (Can substitute with fresh parsley)
  • 1 tablespoon Italian Seasoning (Can be replaced with equal parts oregano, basil, and rosemary)
  • 3 cloves Minced Garlic (Fresh garlic can be used)
  • 1 teaspoon Onion Powder (Can swap with fresh onions)
  • 1 teaspoon Paprika (Smoked paprika can be used)
  • 1 teaspoon Seasoned Salt (Regular salt works as well)
  • 1 teaspoon Black Pepper (Freshly cracked is better)
  • 2 lemons (Zested and juiced)
  • 3 tablespoons Olive Oil (Avocado oil can be used as a substitute)
  • 2 cups Baby Carrots (Cut in halves)
  • 2 cups Baby Golden Potatoes (Any waxy potato can be used)
  • 2 cups Broccoli Florets (Green beans or asparagus are alternatives)

Instructions

  1. Prepare the Marinade: In a bowl, combine the lemon zest, lemon juice, olive oil, dried parsley, Italian seasoning, minced garlic, onion powder, paprika, seasoned salt, and black pepper. Whisk everything together until well blended.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they’re well coated. Cover and let them marinate for at least 15 minutes to absorb those delicious flavors.
  3. Preheat the Oven: While the chicken marinates, preheat your oven to 400°F (200°C).
  4. Prep the Veggies: In a large bowl, toss the baby carrots, baby golden potatoes, and broccoli florets with a drizzle of olive oil, a pinch of salt, and pepper.
  5. Arrange on a Baking Sheet: Spread the marinated chicken pieces on a baking sheet in a single layer, then add the seasoned vegetables around the chicken.
  6. Roast to Perfection: Insert the baking sheet into the preheated oven. Roast for about 25 minutes, or until the chicken is cooked through and the veggies are tender.
  7. Final Touches: Once cooked, remove from the oven and let it rest for a few minutes.
  8. Serve & Enjoy!: Serve the Lemon Herb Chicken and roasted vegetables family-style on a large platter. Squeeze fresh lemon juice over the top.
