  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Italian seasoning or oregano
  • ½ teaspoon paprika (optional)
  • Salt and black pepper, to taste
  • 1–2 tablespoons chopped fresh parsley
  • Lemon wedges
  • Extra parsley for garnish
  • Grilled veggies, rice, or pasta to serve on the side

Instructions

  1. Whisk the marinade: In a mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, Italian seasoning (or oregano), paprika, salt, and black pepper. Whisk until well combined.
  2. Coat the shrimp: Add the peeled and deveined shrimp to the marinade. Ensure each piece is well-coated. Let marinate for about 15 minutes.
  3. Prepare the grill: Preheat your grill to medium-high heat. Use a grill pan if grilling isn’t an option.
  4. Grill the shrimp: Place the marinated shrimp directly on the grill. Cook for 2-3 minutes on each side, or until pink and opaque.
  5. Garnish and serve: Remove the shrimp from the grill and sprinkle with fresh parsley. Serve with lemon wedges on the side.

Notes

Fresh shrimp yield better flavor; avoid overcooking for the best texture.
