A simple yet delightful dish of tender linguine mixed with succulent chicken in a creamy lemon garlic butter sauce.

Ingredients

  • 1 lb chicken breast (sliced)
  • 10 oz linguine
  • Salt and black pepper (to taste)
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • Zest and juice of 1 lemon
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley (chopped, optional)

Instructions

  1. Boil the linguine according to package instructions. Drain and reserve some pasta water.
  2. Season the sliced chicken breast generously with salt and black pepper.
  3. Sear the chicken in olive oil over medium heat until golden brown, about 6-8 minutes.
  4. Sauté the garlic in melted butter for about 1 minute until aromatic.
  5. Add lemon zest, juice, and chicken broth to the skillet and stir to combine.
  6. Combine the cooked linguine and chicken in the skillet, tossing gently.
  7. Stir in the grated Parmesan cheese until melted and creamy.
  8. Plate the linguine and garnish with chopped parsley and a lemon wedge.

Notes

Pairs well with a light salad or steamed broccoli. Store leftovers in an airtight container in the refrigerator for up to 3 days.
